Saggubiyyam Chekkalu
Saggubiyyam Chekkalu is a traditional South Indian crispy snack made with sago (sabudana), rice flour, and aromatic spices. It is especially popular in Telugu households during festivals, evening tea time, or as a crunchy snack for guests. The combination of soaked saggubiyyam, green chilies, curry leaves, and roasted peanuts gives this snack a unique texture and flavor. In Hyderabad and across Telangana and Andhra regions, this snack is loved for its crispiness and simple ingredients that are easily available in every kitchen.
To prepare authentic Saggubiyyam Chekkalu in South Indian style, you need a few basic ingredients. The main ingredient is saggubiyyam (sabudana) which gives the chekkalu its signature crunch. Other ingredients include rice flour, chopped onions, green chilies, curry leaves, ginger, roasted peanuts, cumin seeds, salt, and red chili powder for spice. Some people also add butter or hot oil to enhance the texture and make the chekkalu extra crispy. These ingredients together create a delicious dough that can be shaped into thin discs before frying.
The preparation process begins by soaking 1 cup of saggubiyyam in water for about 3–4 hours until it becomes soft. Drain the excess water and transfer the soaked sabudana into a mixing bowl. Add 1 cup rice flour, finely chopped onion, 2–3 green chilies, chopped curry leaves, crushed roasted peanuts, 1 teaspoon cumin seeds, grated ginger, salt, and a pinch of red chili powder. Mix all the ingredients well and add a little water if required to form a soft dough. Take small portions of the dough, flatten them gently on a plastic sheet or banana leaf to form thin discs.
Heat oil in a deep pan for frying. Carefully slide the flattened chekkalu into the hot oil and fry them on medium flame until they turn golden brown and crispy. Make sure to fry them evenly by turning them occasionally. Once fried, remove them and place on a paper towel to absorb excess oil. The result is a perfectly crunchy Saggubiyyam Chekkalu with a delightful mix of spice and nutty flavor.
Saggubiyyam Chekkalu is best served hot with evening tea or coffee. This crispy snack can also be stored in an airtight container for several days without losing its crunch.
