Palli Undalu Recipe
Palli Undalu, also known as Peanut Laddus, is a classic South Indian sweet that combines simplicity with rich, nutty flavors. To prepare authentic South Indian-style Palli Undalu, the ingredients required are minimal yet wholesome. You will need 1 cup of peanuts (groundnuts), ¾ cup of jaggery (grated), 2–3 tablespoons of water, and a pinch of cardamom powder for flavor. Start by dry roasting the peanuts on medium flame until they turn golden brown and aromatic. Once cooled, remove the skins by rubbing them gently and grind the peanuts coarsely or finely depending on your preferred texture. The jaggery should be melted separately with a little water to form a sticky syrup.
The key step in preparing perfect Palli Undalu lies in achieving the right consistency of jaggery syrup. Heat the jaggery and water mixture until it reaches a soft ball consistency (when a drop in water forms a soft ball). At this stage, add the ground peanut powder and cardamom powder into the syrup and mix thoroughly. Ensure the mixture is well combined while still warm, as this helps in binding the laddus properly.
Once the mixture is ready, grease your hands lightly and start shaping small round laddus while the mixture is still warm. If it cools down, shaping becomes difficult, so work quickly. These laddus can be stored in an airtight container for up to a week, making them a convenient snack option.
