- 2 cups fresh curry leaves
- 2 tablespoons chana dal (Bengal gram)
- 1 tablespoon urad dal
- 6–8 dried red chilies
- 1 teaspoon cumin seeds
- 1 teaspoon coriander seeds
- 4 cloves garlic (optional)
- Small piece of tamarind
- Salt to taste
- 1 teaspoon oil
These ingredients combine to create a balanced blend of spicy, tangy, and earthy flavors that are typical in traditional South Indian cuisine.
How to Prepare Karivepaku Podi – Step by Step
Start by washing the curry leaves thoroughly and allowing them to dry completely to remove moisture. Heat a pan and dry roast the curry leaves on low flame until they become crisp and aromatic. Remove them from the pan and keep them aside. In the same pan, add a teaspoon of oil and roast the chana dal, urad dal, cumin seeds, coriander seeds, and dried red chilies until they turn golden brown and release a rich aroma.
Once the roasted ingredients cool down, add them to a mixer jar along with the roasted curry leaves, garlic, tamarind, and salt. Grind everything into a slightly coarse powder. Be careful not to grind it too finely, as traditional Karivepaku Podi has a slightly grainy texture. Store the podi in an airtight container to preserve its flavor and freshness for several weeks.
