  • 2–3 cardamom pods (powdered)
  • A pinch of salt (optional)

How to Prepare Palli Undalu – Step by Step

First, dry roast the peanuts in a heavy-bottomed pan on medium flame until they become aromatic and the skin starts to crack. Allow them to cool slightly, then rub the peanuts between your palms to remove the skin. Transfer the peanuts to a mixer grinder and pulse them into a slightly coarse powder. Avoid grinding too finely, as the texture gives the laddus their traditional feel.

Next, add grated jaggery and cardamom powder to the peanut mixture and grind again for a few seconds until the mixture begins to combine. The natural oils released from peanuts and the moisture from jaggery help bind the mixture together. If the mixture feels dry, add a teaspoon of warm ghee and pulse again briefly.

Shaping the Traditional South Indian Palli Undalu

Once the mixture is ready, transfer it to a bowl and take small portions into your palm. Press and roll them gently to form round laddus (undalu). Make sure the mixture is slightly warm while shaping, as it helps the laddus hold together perfectly.
