Begin by heating a heavy-bottom pan on low flame. Add the rava and dry roast it slowly until it releases a pleasant aroma and turns slightly golden. This step is crucial in South Indian cooking, as it removes raw smell and enhances the taste. Make sure to stir continuously to avoid burning.

Once roasted, transfer the rava to a plate and allow it to cool completely. In the same pan, heat ghee and fry the cashew nuts until golden brown. Add raisins and fry until they puff up. Switch off the flame and let the ghee cool slightly before mixing.

Now, add the roasted rava, powdered sugar, fried nuts, and cardamom powder into a mixing bowl. Mix everything evenly. Slowly add warm milk little by little and mix gently. Do not add too much milk at once, as it can make the mixture soggy.

While the mixture is still warm, take small portions and shape them into laddus using your palms. Allow the laddus to rest for a few minutes so they firm up naturally. Your delicious South Indian style Rava Laddu is now ready to serve.
