- 1 tablespoon mustard powder
- ½ teaspoon turmeric powder
- 1 tablespoon tamarind pulp (optional for extra tanginess)
- 6–8 garlic cloves (crushed)
- Salt as required
- 3–4 tablespoons gingelly oil (sesame oil)
For Tempering (Tadka):
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 4–5 dried red chillies
- 1 sprig curry leaves
- A pinch of asafoetida (hing)

How to Prepare Instant Tomato Pickle – Step-by-Step Process
First, heat 2 tablespoons of gingelly oil in a pan. Add chopped tomatoes and sauté on medium flame until they turn soft and the moisture reduces completely. Cook until the mixture thickens and oil begins to separate from the sides. This step is important for achieving the correct pickle consistency.
Next, add turmeric powder, salt, red chilli powder, mustard powder, and crushed garlic. Mix thoroughly and cook for 3–4 minutes on low flame. If you prefer a tangier flavor, add tamarind pulp at this stage. Stir well to combine all spices evenly. Turn off the flame and allow the mixture to cool slightly.
In a separate small pan, heat remaining oil for tempering. Add mustard seeds and let them splutter. Then add cumin seeds, dried red chillies, curry leaves, and a pinch of hing.
