- 2 cups fresh Gongura (sorrel) leaves
- 4–5 dried red chilies
- 4–6 garlic cloves
- 1 tablespoon mustard seeds
- 1 tablespoon cumin seeds
- 2 tablespoons oil (preferably gingelly oil)
- 1 teaspoon fenugreek seeds
- Salt to taste
- A pinch of turmeric
For tempering:
- 1 teaspoon mustard seeds
- 2 dried red chilies
- Few curry leaves
- 2 crushed garlic cloves
How to Prepare Instant Gongura Pachadi in South Indian Style
First, clean the Gongura leaves thoroughly and allow them to dry completely to remove excess moisture. Heat a pan and dry roast the Gongura leaves until they wilt and lose their raw smell. Keep them aside. In the same pan, add a little oil and roast dried red chilies, mustard seeds, cumin seeds, fenugreek seeds, and garlic cloves until aromatic.
Allow the roasted ingredients to cool. Grind the Gongura leaves along with the roasted spices, turmeric, and salt into a coarse or smooth paste as per your preference. Heat oil separately for tempering. Add mustard seeds, crushed garlic, red chilies, and curry leaves. Once they splutter, pour this tempering over the prepared Gongura paste and mix well.
