  • 3 green chilies (slit)

  • 2 teaspoons red chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 tablespoon garam masala
  • Curry leaves (1 sprig)
  • Fresh coriander leaves (chopped)
  • 3 tablespoons cooking oil
  • Salt to taste
  • 2 tablespoons lemon juice

For the pachadi masala:

  • 1 tablespoon mustard seeds
  • 1 tablespoon cumin seeds
  • 1 tablespoon fenugreek seeds
  • 4 dried red chilies

How to Prepare South Indian Style Chicken Pachadi

Begin by marinating the chicken with turmeric, salt, ginger-garlic paste, and a little chili powder. Allow it to rest for at least 30 minutes so the flavors penetrate deeply into the meat. Meanwhile, dry roast mustard seeds, cumin seeds, fenugreek seeds, and dried red chilies until aromatic. Let them cool and grind them into a fine powder. This freshly prepared pachadi masala is the key ingredient that gives Chicken Pachadi its authentic South Indian taste and aroma.

Heat oil in a heavy-bottomed pan and add curry leaves, chopped onions, and green chilies. Sauté until the onions turn golden brown. Add ginger-garlic paste and cook until the raw smell disappears.
