How to Prepare Kara Boondi – South Indian Style
Start by preparing the batter. In a mixing bowl, combine gram flour, rice flour, turmeric powder, red chilli powder, hing, and salt. Add water gradually and mix well to form a smooth, slightly flowing batter without lumps. The batter should not be too thick or too watery because the consistency determines the perfect shape of the boondi.
Heat oil in a deep frying pan. Hold a boondi ladle or perforated spoon over the hot oil and pour a small amount of batter onto it. Gently tap the ladle so that tiny droplets fall into the oil forming small boondi balls. Fry them on medium flame until they become light golden and crispy. Remove and place them on paper towels to absorb excess oil.
Preparing the Spicy Kara Boondi Seasoning
In another pan, heat one tablespoon of oil and fry peanuts until crunchy. Add dried red chillies and fresh curry leaves and sauté for a few seconds until aromatic. Add the fried boondi to this mixture and sprinkle extra chilli powder and salt if needed. Toss everything well so the spices coat the boondi evenly.
