Ingredients Required for South Indian Style Gavvalu

To prepare authentic Gavvalu in South Indian style, you will need simple pantry ingredients. The main ingredients include refined flour (maida), semolina (rava) for extra crispiness, grated coconut (optional), sugar or jaggery, cardamom powder for flavor, ghee, and oil for deep frying. Some traditional Andhra recipes also add a little milk to knead the dough, giving it a soft texture inside while maintaining crispiness outside. How to Prepare Gavvalu – Step-by-Step Traditional Method

First, take a mixing bowl and combine maida, a small quantity of rava, a pinch of cardamom powder, and a spoon of ghee. Mix well until the flour turns slightly crumbly. Gradually add milk or water and knead into a smooth, firm dough. Let the dough rest for 10–15 minutes. After resting, divide the dough into small portions and roll them into tiny balls. Using a gavvalu maker or the back of a fork, press each ball gently and roll it to form a shell shape.

Heat oil in a deep kadai and fry the shaped gavvalu on medium flame until they turn golden brown and crispy. Remove and drain excess oil. In a separate pan, prepare thick jaggery syrup by melting jaggery with a little water. Once the syrup reaches a sticky consistency, add fried gavvalu and mix well until evenly coated. Allow them to cool completely so the jaggery coating hardens, giving the sweet its signature glossy finish.
