Ingredients Required for Aaku Pakodi

To prepare authentic South Indian style Aaku Pakodi, you will need fresh and quality ingredients:

  • 2 cups finely chopped leafy greens (spinach, amaranth, or coriander leaves)
  • 1 cup gram flour (besan)
  • 2 tablespoons rice flour (for extra crispiness)
  • 1 finely chopped onion
  • 2 green chilies (finely chopped)
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon carom seeds (ajwain)
  • A pinch of turmeric powder
  • 1 teaspoon red chili powder
  • Salt to taste
  • A few curry leaves (chopped)
  • Water (as required)
  • Oil for deep frying

Using rice flour along with gram flour gives the pakodi its signature South Indian crunch. Fresh curry leaves and green chilies enhance the aroma and authentic taste.

How to Prepare Aaku Pakodi in South Indian Style

Start by washing and finely chopping the leafy greens. In a large mixing bowl, add gram flour, rice flour, turmeric powder, red chili powder, cumin seeds, carom seeds, chopped onions, green chilies, ginger-garlic paste, curry leaves, and salt. Mix everything thoroughly. Now add the chopped greens and combine well. Sprinkle a little water gradually and mix until you achieve a thick batter consistency. The mixture should not be too watery.

Heat oil in a deep frying pan on medium flame. Once the oil is hot, drop small portions of the mixture into the oil using your fingers. Fry the pakodis until they turn golden brown and crispy. Stir occasionally to ensure even frying. Remove and place them on a paper towel to absorb excess oil. Serve hot with coconut chutney or tomato ketchup for the best taste experience.
